Chewy Choc Chip Cookies

I've tried so many different cookie recipes to find the perfect balance between quick-to-make and tasty-to-eat. This one ticks both boxes.


Chewy in the middle, with a crispy sweet n' salty crust - these are always a hit with both kids and adults.



You'll get around 18 large cookies from this mix.


Ingredients

  • 1 cup butter, softened

  • 1 cup light brown sugar

  • 3/4 cup granulated sugar

  • 2 eggs

  • 3 cups plain flour

  • 1 tsp bicarbonate of soda

  • 1/2 tsp salt (plus a little extra to add after the bake)

  • 2 tsp vanilla extract

  • 1 cup choc chips (I like to use dark)


Method

  1. Mix butter and sugars together.

  2. Add the eggs, flour, bicarb, salt and vanilla and stir until flour is incorporated.

  3. Stir in the choc chips.

  4. Spoon balls/domes of mix onto lined baking trays - approx 2 tablespoons of mix for each cookie. The cookies will spread, so give them space!

  5. Bake for 10-15 mins on Gas 4-5 / 180-190ºC. Don't be tempted to leave them in too long - they might look underbaked in the middle, but they'll continue to bake while cooling on the tray.

  6. Sprinkle tops of cookies with a little extra salt (my salt of choice for sweet dishes is Halen Dewi), and push some extra choc chips into the tops if you like.

  7. Leave cool for a at least 5 minutes on the baking tray, then enjoy!



If you want a chewy cookie, make sure not to over-bake them.

The cookies will keep for about a week in an airtight container, but they're definitely best straight from the oven. The baked cookies freeze well too, but I prefer to freeze some of the mix for future cookie emergencies 😉
