Fast Flatbreads

So quick, simple and cheap to make, but also super-tasty. Flatbreads are great for dunking, dipping or packing with hot/cold fillings.



I’ve found that the pickiest eaters love to fill their own flatbreads, so I cover the dining table with bowls of veggies, grains, salads, meat and sauces to get the little ones involved in creating and tasting new things.


This is how to make flatbreads in less than 30 minutes:


Makes approx 6 flatbreads.


Ingredients

  • 2 cups of self-raising flour (if you only have plain flour, add some baking powder to the mix - 2 tsp per cup of flour)

  • 2 Tbls oil

  • 1/2 tsp salt

  • 1 tsp herbs (optional)

  • 1/2 warm water


Method

  1. Mix oil with the dry ingredients in a bowl.

  2. Add warm water bit by bit, until a dough forms that’s just firm enough to handle.

  3. Cover the bowl with a teatowel and leave the dough to rest for at least 10 mins.

  4. Pinch off chunks of dough and roll out on a floured surface. Try to get the flatbreads as thin as you can - the thickness of a 50p piece is a good depth. (The diameter of your flatbreads will depend on what size pan you have.)

  5. Cook the flatbreads one-by-one, in a lightly oiled pan, over medium heat for approx 1-2 mins a side.

  6. Serve hot/cold.

  7. These keep well in an airtight container for a few days, but also freeze well if you wanted to make a larger batch.
