Spiced Nuts

These are a big hit every time I make them. Originally intended as a salad fixing, to add that much need crunch to your salad and just the right amount of sweet heat. They make a great snack though too.

Ingredients:
250g nuts (whatever kind you like - I do a mix with various seeds)
1 egg white
1 Tbls honey
2 Tbls sugar (I like to use light muscovado)
1 tsp cayenne
½ tsp black pepper
½ tsp salt

Method:
Mix everything, except the nuts, into a runny paste.
Add the nuts and mix until coated.
Spread out on a baking sheet/baking paper and bake for approx 20 mins on Gas 5/6.
Scoot them about around 10 mins into baking, so they toast evenly.
Remove from oven and leave to cool, adding more salt to taste.
Jar or bag up the cooled nuts. (If there are any! They taste amazing hot from the oven). They keep well for a week in an airtight container, and would possibly be ok for far longer, but they've never survived passing snackers for longer than that here, so I've no idea.
